Meatless Monday: comfort food

Happy Monday, all! I am very perked up by the sunshine and the blue, blue sky over the D today...it just feels like spring is on its way.

Having said that, it's still pretty freakin' cold out! So, I'm of a mind to explore lots of meatless comfort food options, if you don't mind:)

Most definitely want to try this splendid-and-easy-looking avocado pasta.

But, as I was telling my friend, Charisa, the other day: I need to get back into my soup-habit! Having a simmering pot of soup on the stove inspires such a cozy feeling! This hearty, healthy soup recipe caught my eye on the Michigan Farm Fresh Food blog.

What about you? What are you making for dinner this week?

cough and cold care

Hey there, friends! Sorry it has been so long between posts, but I've been feeling a bit under-the-weather lately.

Against my will, I've managed to contract a gnarly cough--probably because it's been floating around the university since the beginning of October. I guess I should be impressed with how long my immune system held out! For now, though, I'm trying to lay low. Dress comfy. Take care of myself.

I've been drinking cups and cups of tea, mostly this kind and this kind.

I've been eating cough drops like candy, my favorites are these. But, I would love to try these homemade honey "cough pops" pinned first by Jess.

Last but not least, I've been trying to dress myself cozy--sweaters, layers, etc. Today, hilariously, I didn't realize until I was already out the door that it is 65 degrees out today.  I'm either burning up because of my four layers, or I have a fever. Or, both.

So, here's to a healthier rest of the week! I do hope you are all feeling well:)

"going to the beach when it's cold" packing

I've had my fingers crossed for about a week now that it would be warm in the Mitten this weekend. Sigh, it will not be quite the summery-mini-break I'd hoped for--as warm as 70 degrees. Fahrenheit.

So, I'm planning my packing list for our trip, and my mindset has been: "What does one wear to the beach in winter???"

Thus, here is my ideal packing list for this weekend:

a comfy-looking, super-soft, long-sleeve tee

an extra blanket to wrap up in, or spread on the beach for stargazing:

Probably going to need a hat, like this

or this

...and some gloves (or "glovelets," anyone?)

At least that will keep the fingers free to make s'mores...mmmh.

Throw everything in a practical, yet super cute, beach tote:

and you're good to go.

(speaking of, I'll see you all next week--hopefully with pics of our chilly beach getaway!)
